can I do this myself just by putting them out, or should I need a tech to adjust/modify the amp to be able to run with only 2 6L6 without hurting the amp? It a mid 70s SF twin reverb with push/pull master.

Removing 2 output tubes requires an impedance change to 1/2 of the original.
