I have an all tube Gibson Skylark 1963 10watt model, and would like to disconnect the 10" speaker and instead use my 2x12 orange with vintage 30s.
1. Can I do this with the ohm load as is?
2. Will the wattage be enough to power the Celestions?
(my other amp is a 30watt and its perfectly fine, just wanna make sure)

as long as the resistance (4 ohms, 8 ohms or whatever) is the same,
you'll be just fine. And I would recommend it if its possible.
2x12's are my favorite.
